Andrea Rondinelli is the host and founder of Osteria dalla Zabariona, opened in Ravenna in 2021. His work brings together hospitality, research into Romagna food culture, and the selection of small producers and artisan winegrowers.
A family story
Hospitality has been part of his family since 1 March 1967, when his grandfather Giovanni began the restaurant story documented in the historical photograph preserved by the osteria.
Research into Romagna recipes
Andrea’s work begins by listening to the azdore, comparing local sources and meeting the people who farm, raise animals and make food. His research includes Sucialesta, egg-pasta Curzul, Urciôn, Savor, wild herbs and Adriatic cooking.
